A very delicious way to eat Ratatouille with rice
- 2 Courgettes
- 1 Eggplant
- 3 Peppers
- 2.5cups Rice
- 1bag Vegetable stock
- 1 Onion
Fry the rice in a pot with some oil and salt. Fill 5 cups water in the pot – always one after the other.
Quarter the eggplant and courgettes alongside and chop them.Dice the onion and fry it with the eggplant in a wok.
Now add courgettes then the dices peppers. Season and let it boil a few minutes in the vegetable stock.
