Rice with Ratatouille

20160509184055.jpgA very delicious way to eat Ratatouille with rice


  • 2 Courgettes
  • 1 Eggplant
  • 3 Peppers
  • 2.5cups Rice
  • 1bag Vegetable stock
  • 1 Onion
  • Garlic
  •  Salt
  •  Pepper


Fry the rice in a pot with some oil and salt. Fill 5 cups water in the pot – always one after the other.

Quarter the eggplant and courgettes alongside and chop them.Dice the onion and fry it with the eggplant in a wok.

Now add courgettes then the dices peppers. Season and let it boil a few minutes in the vegetable stock.20160509184211.jpg
