Ratatouille Quiche

wp-1489615614323.jpgA mix of 2 delicious meals – Ratatouille and Quiche. A good solution if there are too many vegetables left…

Ingredients:

  • 250gr flour
  • 150gr yogurt
  • 80gr butter
  • 1 onion
  • 1 aubergine
  • 1 courgette
  • 1 bell pepper
  • 8 cherry tomatoes
  • 3 eggs
  • 250gr grated mozzarella
  • 200gr creme fraiche
  • salt, pepper

For the dough knead the flour with the yogurt, butter and salt. Set aside.

Dice the vegetables and fry them. First the onion, the aubergine (eggplant), courgette and last the bell pepper and the quartered cherry tomatoes. Flavor with salt and pepper.

For the sauce mix the eggs with creme fraiche, mozzarella, salt and pepper. Add to the veggie-mix.

Roll out the dough and lay it in a tart-form, press it a little into the form. Pour the veggie-mix over the dough and bake at 175°C for about 25mins.wp-1489615614325.jpg
