A super delicious soup with a little wine…
- 1.2kg potatoes
- 400gr carrots
- 400gr leeks
- 700ml white wine, dry
- 1 pack dill
- 400gr creme fraiche
- 1l vegetable broth
- 1tsp sugar
- some olive oil
- salt, pepper, rosemary, coriander
Dice the peeled potatoes and carrots. Wash the leeks, cut them alongside and then into small stripes.
Fry the potatoes in a big pot with a little olive oil. After a few minutes add the carrots and the leeks. Now add the veggie broth and let simmer for at least 1hour.
Puree the soup, add spices, creme fraiche and the wine. Let simmer for another 15mins and serve with some delicious bread.
