I bought a small watermelon a while ago but never got to eat it. Not good enough anymore to eat it pure but too good to bin it, I decided to cook a nice jam with it…
- 1 small watermelon
- 2 tbsp lemon juice
- 1 bottle Vanilla essence
- 750gr Jam sugar
Remove the green from the strawberries. With the lime zest, juice, vanilla essence and jam sugar puree in a pot. Let cook for about 5mins while stirring.
Wash the jam-glasses in hot water and fill them with the hot liquid marmelade. Close the lid and place them upside down to seal. After around 30mins they can be turned back and let cool down.
Store jam in a cool dry place. After opening refrigerate.
