Melon Pasta Salad

PSX_20170414_174911-1One of the best ways for leftover Melon… A nice and fresh Pasta-Salad perfect for the spring or summer – maybe for a garden party?!

Ingredients:

  • 1/2 Melon
  • 400gr Feta
  • 500gr Farfalle
  • 75gr Rocket Salad
  • 3tbsp Walnut oil
  • 2tsp Crema di Balsamico
  • salt, pepper

Cook the pasta in lightly salted water. When done quench the pasta.

While letting the Farfalle cool down, dice the melon and the feta. Mix in a big bowl, add the rocket salad and season with walnut oil, balsamico, salt and pepper.

Enjoy… best with some fresh bread aside ❤
