A very delicious japanese candy…
- 200 gr rice flour
- 350 ml water
- 100 gr sugar
- 3 tbsp matcha powder
- Anko (sweet red bean paste)
In a bowl whisk the flour with sugar, matcha powder and water until well combined.
Cook the mochi in a microwave for about 1 min, stir, heat up another min, stir again and finally 1 more min in the microwave. Let cool, remove and knead the dough.
Dust the work surface generously with the cornstarch and roll out the mochi dough in it. It is super sticky so it is plenty cornstarch needed.
With a bigger glass cut out circles from the dough. Now add the Anko, place 1 tsp each circle in the middle and form a small ball by pinching four corners together to wrap the Anko, then pinch the remaining corners. Cover with cornstarch to seal…
Enjoy within a few days and store in a cool and dry place.
