- 400 gr potatoes
- 5 bell peppers, yellow or red
- 1 big onion
- 500 ml vegetable stock
- 3 tbsp tomato puree
- 250 gr mascarpone
- salt, pepper, paprika
Peel and dice the onion and potatoes, fry in a pot with some oil. Add the dices peppers. Fry the veggies a few minutes and add theh vegetable stock. Let simmer for approx. 1 hr.
Now puree the soup. Blend in the mascarpone, the tomato puree and season with salt, pepper and paprika.
Let the soup simmer for another 15 mins.
