Zucchini Bake

PSX_20170621_210417A wonderful summerly, refreshing and healthy meal… I personally love the yellow zucchini… mhhh… 


  • 2 green Zucchini / Courgettes
  • 2 yellow Zucchini / Courgettes
  • 2 graffiti Aubergine / Eggplant
  • 250 gr yellow and orange cherry tomatoes
  • 2 pack grated Mozzarella
  • Salt, pepper
  • olive oil


Cut the zucchini and aubergine in stripes, half the cherry tomatoes. In a ovenform season them with salt, pepper and oliveoil. Top with the Mozzarella.


Bake at  200°C until the cheese is gold brown and lovely crispy.
