A wonderful summerly, refreshing and healthy meal… I personally love the yellow zucchini… mhhh…
- 2 green Zucchini / Courgettes
- 2 yellow Zucchini / Courgettes
- 2 graffiti Aubergine / Eggplant
- 250 gr yellow and orange cherry tomatoes
- 2 pack grated Mozzarella
- Salt, pepper
- olive oil
Cut the zucchini and aubergine in stripes, half the cherry tomatoes. In a ovenform season them with salt, pepper and oliveoil. Top with the Mozzarella.
Bake at 200°C until the cheese is gold brown and lovely crispy.
