The summerly version of mousse au chocolat… Very delicious!
- 2 Lemons
- 500 gr plain yogurt
- 6 leaves gelatin
- 200 gr heavy cream
- 100 gr sugar
- 2 eggs, whites
- some white chocolate
Zest and juice the lemon and mix the zest with the yogurt.
Soften the gelatin in a bowl of cold water and dissolve it in a pan with the heated lemon juice. Now add to the yogurt.
Seperate the eggs and beat the eggwhite and slowly add some of the sugar.
Now beat the cream to soft peaks and slowly add the rest of the sugar.
As soon as the yogurt gets a bit harder mix in the whipped cream, eggwhite and white chocolate (use very fine chunks).
Let rest in the fridge over night and enjoy with the starfruit.
