A very fresh and delicous Summer salad… Perfect as side for a bbq
Now thats me trying to eat a little healthier… Isnt that easy – or is it?!
- 1.5 kg Broccoli
- 250 gr Panko or Breadcrumbs
- 250 gr Mozzarella/ Cheddar, grated
- 2 Eggs
- 1 bunch Scallions
- salt, pepper, nutmeg
Wash and cut the Broccoli, then cook in boiling water for a few minutes. Now chop or puree it.
Blend in the rest of the ingredients and form small croquettes.
Bake at 200°C for about 15-20mins until slightly brown and crispy.
Tastes amazing with a Ratatouille Dip: Just puree the rest of the cooked Ratatouille 😉
