Broccoli Croquettes

Now thats me trying to eat a little healthier… Isnt that easy – or is it?! PSX_20170613_220537

Ingredients:

  • 1.5 kg Broccoli
  • 250 gr Panko or Breadcrumbs
  • 250 gr Mozzarella/ Cheddar, grated
  • 2 Eggs
  • 1 bunch Scallions
  • salt, pepper, nutmeg

 

Wash and cut the Broccoli, then cook in boiling water for a few minutes. Now chop or puree it.

Blend in the rest of the ingredients and form small croquettes.

Bake at 200°C for about 15-20mins until slightly brown and crispy.

Tastes amazing with a Ratatouille Dip: Just puree the rest of the cooked Ratatouille 😉
